Pulled apart chicken, smothered in peanut butter sauce, heated among oil to create a level of crisp. It feels unnatural to prepare, unusual to see, and unexpectedly okay to eat. It’s not the best thing in the world, but it’s tasty enough to get the job done– if the job is lean protein ruined by fatty protein. But I’ll tell you what: the chips really helped. Revisionist sandwich-making would make me surely include the kettle chips inside the sandwich rather than a side. Their salty crisp really pushed the experience up a notch. Sometimes you gotta get creative and work with what you got, even if it’s not what you expected. You’d be surprised how often it works out…
