A rose by any other name is still a rose, thus a chopped up steak fried with cheese and spices is a cheesesteak, as well, even if it doesn’t live in a roll or come from Philadelphia. Yeah, you need to chew a lot because it’s kind of thick-cut. Yeah, you used too much pepper on really nice sirloin. But you took the parts, and you made something great. Like you.
