We’ve had pork bacon and dabbled in turkey bacon, and while these bison strips only look like bacon, they do share a salty deliciousness that you’d get from bacon. It’s meatier and doesn’t crisp in the way those other bacons do, but what you get instead is something worth sinking your teeth into– like pork roll, perhaps. Put it on Italian bread to absorb the greasy excess and slap some lettuce on there just to make yourself feel like you’re doing something right. It may not be the way we hoped to start the year off– weight loss and healthy– but it’s a step in the right direction (when you take away all those fries), because bison is leaner than beef or pork. Oh, who cares! 2015 is your year, so get out there and eat a bison.
